Yahara Chocolate's 70% dark chocolate mixed with elderflower cacao nibs and liu bao caterpillar tea.  

Maker's Notes:

What would a groundhog like to eat when woken up from its winter nap?  I started with an earthy ingredient, liu bao tea from Guangxi, China.  This fermented tea is left in a bamboo basket for caterpillars to eat and the droppings are collected after the tea is gone.  The castings are steam sterilized and packed into bags for aging.  The tea is steeped like pour-over coffee to make a dark earthy tea.  

To add something flowery, organic cacao nibs were soaked in elderflower liquor for week and then dried to remove all the alcohol.  These nibs were mixed into the ground chocolate along with a few tablespoons of the liu bao tea to make the finished chocolate bar.

These limited edition bars are wrapped in a color your own wrapper.
