a bronze medal at the Academy of Chocolate in London 2025. The star is our Nacional cacao from the 2026 harvest in La Providencia, Manabí, Ecuador. Macambo is a wonderful guest. It is a cousin of cacao that grows wild in the Amazon rainforest. We caramelized it and added a pinch of sea salt. Small batch, only 300 bars.
