Aged Tie Guan Yin Oolong tea

Notes: Immediate roasted aroma that wraps the tea in soft blanket.  The taste is mellow, honey, and sweet.  Each sealed packet is 7g of tea, so it can get strong quickly once the 3rd steep if you use the whole amount.  If you halve the amount to 3.5 g, lengthen the steep times Maker’s Notes: Harvested in Autumn 2013 and produced entirely by hand from start to finish using hand kneading and basket roasting. Re-roasted in 2019 and then roasted again October 2023.  This tea has a unique character that is mellower than a recently produced roasted Tie Guan Yin. There is a cooling feeling in the mouth and an herbaceous character that reminds me of Grass Jelly 仙草 pudding. There is an underlying sweetness that will become more prominent as the most recent re-roasting taste fades.  Tea: 7g Water: 5oz., 200° Steep: 1, 2, 3, 4 Time: 15, 10, 10, 15 sec.
