Maker's Notes:

We use our 80% Dark Chocolate made with Raw Panela sugar from Colombia in this Halloween Bat.  Three types (Aji Rico, Cayenne, Jalepeño) of organic peppers from Blue Moon Community Farm are dried and ground with all their seeds to make our pepper flakes.  One layer of pepper is spread on the bottom of the mold before it is filled with chocolate, then more flakes are added to the back.  Each bat is 25g of chocolate and 1/5 teaspoon of pepper flakes.
